Un roscón de Reyes...diferente/ Kringle: cinnamon bread

Hola a todo@s!
Espero que esteis disfrutando mucho de éstos días de fiesta. Y para disfrutar hasta el último momento, hoy he querido traeros una receta sencilla y especial para el Día de Reyes, una alternativa al riquisimo rosco de Reyes, o mejor dicho, corona de pan de canela; que encaja perfectamente como acompañamiento mientras abrimos nuestros regalos (o para cualquier fría tarde de invierno junto con amigos o familia)  :)


El Kringle (que significa anillo o corona) es un pastel típico de los países escandinavos que normalmente está relleno de canela y uvas pasas (o cualquier otro ingrediente que nos guste, como trocitos de chocolate, nueces o frutas escarchadas... :))











Como buen postre para Reyes, no podía dejar de esconder el haba y el muñeco sorpresa. Tradicionalmente, aquél que encuentre la sorpresa, será coronado/a como rey/reina de la casa, y aquél que encuentre el haba será castigado a pagar el roscón :))






Aquí os presento mi versión del Kringle:

Comenzamos!

Ingedientes para la masa:
30 g de mantequilla a temperatura ambiente
15 g de levadura fresca
300 g de harina (yo he utilizado harina normal, no de fuerza)
1 yema de huevo
30 g de azúcar
120 ml de leche templada
1 pizca de sal
Ralladura de un limón

Ingredientes para el relleno:
2 cucharadas de canela molida
60 g de azúcar
50 gr de mantequilla derretida
1 puñado de nueces picadas (opcional)
1 puñado de uvas pasas opcional
1 pizca de jengibre en polvo

1º) Ponemos en un bol la harina en forma de volcán y en el medio añadimos el azúcar, la leche con la levadura deshecha, la mantequilla, la ralladura de limón, la pizca de sal y el huevo.
Comenzamos a mezclar todos los ingredientes poco a poco con las manos hasta conseguir una masa suave y elástica.
Después formamos una bola con la masa, colocamos en un bol y tapamos con un paño limpio y colocarla en un sitio templado para que leve hasta que veamos que ha doblado su volumen.

2º) Cuando nuestra masa haya doblado su volumen, comenzamos estirando la masa en la mesa de trabajo con la ayuda de un rodillo para así formar un rectángulo.



Para hacer el relleno, lo que he hecho ha sido calentar el azúcar a fuego lento en un cazo para que se vaya deshaciendo poco a poco, luego he añadido la canela, la pizca de jengibre y por último la mantequilla; añado también las nueces y las uvas pasas para que se vayan impregnando del sabor. De esta forma, cuando vayamos a comer el rosco, el azúcar estará deshecho y al morder no tendremos una sensación arenosa, aunque si lo preferís, bien podéis mezclar estos ingredientes sin llevar a calentar, porque estará igual de bueno.

Ahora podemos extender todo el relleno por encima de nuestra masa con un pincel o una espátula.

3º) Por el lado más largo comenzamos a enrollar la masa, hasta que tengamos la forma de tubo. Con un cuchillo, haremos un corte de arriba abajo, pero sin llegar a cortar hasta el final en uno de los extremos.
















Ahora cogemos los dos extremos y comenzamos a hacer la trenza, con ciudado de que la parte que está cortada os quede siempre a la vista.
Hacemos un circulo con la trenza y pegamos los extremos escondiéndolos un poco para que quede bonito.
Ahora volvemos a cubrir con un paño limpio y dejamos reposar (ya en la bandeja del horno) durante 1 hora.

4º) Precalentamos el horno a 180º C y horneamos durante 30-35 minutos. Si os gusta se puede adornar con una glasa, almendras fileteadas o fruta escarchada, aunque creo que sin adornar queda más bonito (a vuestro gusto!)
 A comer!!!! :)

I hope you are enjoying the holidays and I hope this recipe a good help to keep on enjoying even more.
Today a simple but very special recipe to celebrate 'The three kings day' (or the Three Wise Men) that every 6th of january everybody celebrates in Spain. A nice twist to the tradicional sweet bread (rosco); it fits perfectly as an accompaniment as we open our gifts (or just enjoy during any cold winter evening to share with friends or family).

The kringle bread (kringle means ring or crown) is a popular sweet bread from Scandinavia, normally filled with cinnamon and raisins, but you can also add nuts, chocolate chips...













If you like to follow the Spanish tradition, you could hide a bean inside the bread while you are making it, and the person that finds the bean will have to pay the treat; and secondly, you could hide a small surprise (figurine) and the person who finds it will be crowned as a king or queen of the house.
This time I really like to mix this tradition with a Scandinavian recipe :)



Here I present you my version of the kringle, I hope you like it.

Here we go:

Ingredients for the dough:

30 g of butter at room temperature
15 g of yeast
300 g of flour
1 egg yolk
30 g of sugar
120 ml of warm milk
1 pinch of salt
Zest of one lemon

Ingredients for the filling:

2 tablespoons of ground cinnamon
60 g of sugar
50 g of butter
A handful of chopped walnuts (optional)
A handful of raisins
1 pinch of ground ginger

1º) Put the flour in a bowl and add the sugar, milk, yeast, butter, lemon zest, pinch of salt and the egg yolk.
Slowly mix all the ingredients until you get a smooth and elastic dough. Then we make a ball with the dough, put it in a bowl and cover it with a clean cloth; place it in a warm place until you see that it has doubled in size.

2º) Once our dough has grown, stretch the dough on the working table with a rolling pin and form a rectangle.
To make the filling, heat the sugar in a pan at low temperature until it melts, then add the butter, take it off the fire and add the rest of the ingredients: cinnamon,ginger, nuts and raisins.
So when we eat the bread, the sugar is melted and the bite will not have a gritty filling; but if you prefer, you can mix all the ingredients and the melted butter without melting the sugar; it will be just as good.
Extend the filling over the dough with a brush or spatula.



3º) Now start rolling the dough on the longer side, so you will get a tube. Cut open one side but leave one end intact like you see in the next pictures.
Take the two ends and start to make the braid; make a circle and paste the ends well to make it pretty. Cover again with a clean cloth and let it rest (already in the oven tray) for about 1 hour.








4º) Preheat the oven at 180º C and bake for 30-35 minutes. If you like you can decorate with icing sugar, almonds or candied fruit; although I think it´s very nice just without decorating.
Now, eat and enjoy!!!

Tarta de Chocolate para Nochevieja/ Chocolate cake for New Year´s Eve

Hoy seguimos con la 'serie' de postres para la época de Navidad. Una tarta de chocolate sencilla, elegante y perfecta como guinda a la cena de Nochevieja.
Hmmm. hmmm..hmmm, ojo! querréis repetir!!! :)










Empezamos!

Ingredientes para el bizcocho:


175 g de mantequilla a temperatura ambiente

175 g de azúcar
175 g de harina
3 cucharadas de caramelo líquido
40 g de almedras molidas
1/2 sobre de levadura en polvo
40 g de cacao
1 pizca de sal



Ingredientes para la cobertura y el relleno:


225 g de chocolate puro

225 g de mantequilla
55 g de azúcar moreno
5 cucharadas de leche condensada
1/2 cucharadita de azúcar avainillado


1º) El primer paso es mezclar todos los ingredientes para la cobertura en un cazo y lo ponemos a fuego lento, mezclando bien, hasta que todo se haya derretido.
A continuación vertemos la mezcla en otro recipiente y dejamos que se enfríe. Tapar y meter en la nevera por 1 hora.



2º) Precalentamos el horno a 180º C y forramos el molde (el mío es de 22 cm ) con papel de horno.

3º) Para la mezcla del bizcocho, primero batimos la mantequilla y el azúcar; una vez que estén bien integrados, añadimos poco a poco los huevos batidos, después el caramelo liquido y la almendra molida.

4º) En un bol a parte, tamizamos la harina, el cacao y la pizca de sal y las añadimos a la mezcla anterior. Si la mezcla está demasiado espesa podemos añadir un poco de agua.

5º) Ponemos la mezcla en el molde y dejamos en el horno a 180 ºC durante aproximadamente 35 minutos.
Después sacamos el molde del horno y dejamos enfriar el bizcocho durante 5 minutos. A continuación, retiramos el molde y dejar que se enfríe del todo.
En este caso yo he hecho dos bizcochos ya que quería un pastel alto (podéís repartir la masa en dos moldes o hacer otra mezcla para otro bizcocho con los mismos ingredientes)



6º) Por último rellenamos el bizcocho con el relleno de chocolate (lo cortáis a la mitad si sólo habéis horneado un bizcocho o si tenéis dos, ponéis uno encima del otro después de haberlo rellenado).
También usamos el relleno para cubrir el resto de la tarta. Al final, a modo de decoración, yo he puesto por los laterales dados de almendra, creo que queda un resultado muy elegante, acorde con la Nochevieja.
Para acompañar el pastel, he hecho un vino caliente especiado casero, muy típico de Alemania y de los países del norte de Europa que se toma durante el periódo de Adviento; una buena manera de combatir el frío.







El vino caliente especiado es una buena opción para acompañar un trozo de tarta




Ya está! no me digáis que no es una receta sencilla, además podéis usar vuestra imaginación a la hora de decorar.

Hi everyone!
I would like to continue with the 'Christmas time dessert´s series'. A good chocolate cake, simple, elegant and perfect to finish the New Year´s Eve dinner and start de New Year´s celebration.

Hmmm...hmmm... hmmm! careful! you will want more than one piece!! ;)









Let´s start!

Ingredients for the cake:

175 g of butter (room temp.)
175 g of sugar
175 g of flour
3 tablespoons of liquid caramel
40 g of ground almonds
2 teaspoons and half of baking powder
40 g of cocoa
1 pinch of salt




Ingredients for the filling:

225 g pure chocolate
225 g of butter
55 g of brown sugar
5 tablespoons of condensed milk
1/2 teaspoon of vanilla sugar

1º) First we mix all the ingredients for the filling in a pan; low heat until everything is well melted. 
Then, pour the mixture into another bowl and let cool down, cover and place in the refrigerator during 1 hour.



2º) Preheat the oven at 180 ºC and cover the mold with baking paper.

3º) For the cake mixture, first we mix the butter and sugar, once they are well integrated, gradually add the beaten eggs, then the liquid caramel and the ground almonds.

4º) In a separate bowl, sift the flour, cocoa and pinch of salt and add to the previous mixture. 

5º) Put the mixture into the mold and leave in the oven at 180º C for about 35 minutes. Then, take the cake out from the oven and let cool down for 5 minutes. Then, remove the mold and let cool down completely.
In this case I´ve made two cakes, you can divide the dough in two or make another separate cake with same ingredients and measures, so the cake will be taller (that is what I wanted).



6º) Finally we fill the cake with the chocolate (which you will cut thorugh the middle if you have made just one cake. If you have made two cakes, put one on top of the other after filled). 
We also use the filling to cover the rest of the cake. 
For the decoration, I used almond cubes, I think it looks pretty elegant, just ready to enjoy during New Years´s Eve.
We need something to drink with the cake!! I made mulled wine or Gluhwein, a traditional drink from Germany and northern countries of Europe, especially around Christmas.






Mulled wine it´s a nice option to drink while enjoying the cake










That´s it! I think it is a simple recipe and you can also use your imagination when you are decorating it.
