Bizcocho Bundt con cobertura de caramelo/ Bundt cake with caramel frosting

Hola a tod@s!
Siguiendo en la linea de los postres otoñales, hoy traigo uno de los bizcochos, que por la forma redondeada de su molde (bundt) y por los resultados finales es uno de mis preferidos. Podemos encontrar múltiples formas del Bundt cake y recetas.











La receta de hoy...otoñal con manzana y nueces, pero ya adentrándonos en la época de Navidad que se avecina por esos toques especiados que le dan la canela, y el jengibre.
¿Empezamos?

Ingredientes para el bizcocho:

3 manzanas
125 g de mantequilla a temperatura ambiente
300g de harina
2 cucharaditas de canela
ralladura de naranja
1/2 cucharadita de jengibre
1 cucharadita de levadura
1/2 cucharadita de bicarbonato
4 huevos
60 ml de leche
200 g de azúcar moreno
150 g de azúcar blanca
1 puñado de nueces
1 pizca de sal



Ingredientes para el glaseado:

50 g de mantequilla
100 g de azúcar moreno
ralladura de naranja
1/2 cucharadita de canela
100 ml de nata para montar
150 g de azúcar glas



Elaboración del bizcocho:

1º) Pelar las manzanas y cortarlas en trocitos pequeños, las reservamos en un bol donde vamos a añadirles el jengibre, la canela en polvo y la ralladura de naranja...las dejamos macerar.



2º) Mezclar la mantequilla con el azúcar moreno con las varillas hasta que obtengamos una masa suave. Seguidamente añadimos los 4 huevos, uno después de haber mezclado el otro.



3º) Añadimos a ésta mezcla las manzanas, el azúcar blanco y la leche; después añadiremos la harina tamizada junto con la levadura, el bicarbonato y la pizca de sal. Removemos lentamente hasta que todos los ingredientes se integren perfectamente.




4º)Vertemos nuestra mezcla para Bundt cake en el molde (previamente engrasado) y cuando lo tengamos lleno por la mitad, distribuimos las nueces laminadas. Seguidamente verteremos el resto de nuestra mezcla.
Damos unos golpecitos en el molde para que se distribuya uniformemente.



5º) Llevamos al horno previamente precalentado a 180º C durante un tiempo aproximado de 45-50 minutos (dependiendo de cada horno)

Importante; Cuando lo saques del horno, déjalo enfriar antes de sacarlo del molde.




Elaboración del glaseado:

1º) Derretir la mantequilla en un cazo, una vez que esté liquida, añadiremos el azúcar moreno, la canela y la ralladura de naranja.



2º) Añadimos ahora la nata hasta que hierva, sin dejar de remover se irá convirtiendo poco a poco en una deliciosa crema de caramelo.

3º) Retiramos del fuego y después de haber dejado reposar la mezcla durante unos minutos, le añadimos el azúcar glas previamente tamizada, verás que va adquiriendo una consistencia cremosa.

Ya puedes decorar tu Bund cake!, en éste caso yo he espolvoreado por encima de la crema de caramelo unos trocitos de almendras.






Está delicioso, la manzana le da una jugosidad y textura muy ricas; perfecto para una ocasión o celebración especial! Yo he tenido que darme prisa en sacar las fotos, el bizcocho ha volado!! :)

Hi everyone,
The Bundt cake is one of my favourite recipes, just because the shape is so cool and it tastes really nice; It is perfect for special occasions. The smell of the cinnamon and ginger takes me close to the Chistmas time.









There are many recipes for Bund cake, but the one from today...apple, nuts and caramel frosting... is just delicious!

Here we go!

Ingredients for the cake:

3 apples
125 g butter room temperature
300 g flour
2 teaspoons cinnamon
orange zest
1/2 teaspoon ginger
1 teaspoon yeast
1/2 teaspoon baking soda
4 eggs
60 ml of milk
200 g of brown sugar
150 g of white sugar
1 handful of walnuts
1 pinch of salt




Ingredients for the frosting:

50 g butter
100 g of brown sugar
orange zest
1/2 teaspoon cinnamon
100 ml whipping cream
150g icing sugar



Preparation for the cake:

1) Peel the apples into small pieces, reserve in a bowl where we will add the ginger, cinnamon and orange zest ... let it rest for a few minutes.




2) Mix well the butter with the brown sugar until we get a soft dough. Then we add the 4 eggs, one after mixing the other.




3) We add to this mix the apples, white sugar and milk and then we can add the sifted flour with baking powder, baking soda and a pinch of salt. Slowly stir until all ingredients are well integrated.



4) We pour our Bundt cake mix into the mold and when we have it half full, distribute laminated nuts, then pour the rest of the mix. Make sure the entire mixture is evenly distributed.



5) Take it to the oven preheated at 180 ºC for about 45-50 minutes (depending on the oven)
Important: after you take it out from the oven, let cool before removing the cake from the pan.



Caramel frosting: 

1) Melt the butter in a pan, then, add brown sugar, cinnamon and orange zest ... stir well until all ingredients are blended.



2) Now add the cream until it sarts boiling, stirring well, should evolve gradually into a delicious caramel cream.

3) Remove from the heat and leave cool down for a few minutes. Add the icing sugar sifted previously and stir well, you will see that it acquires a creamy consistency.

Now you can decorate your Bundt cake.... in this case I sprinkled on top a few bits of almonds.






It is delicious, apple gives much juiciness and yummie texture; perfect for a special occasion or celebration! and this time I had to hurry to take the pictures, the cake was gone really quiclky !! :)
