Tarta de queso/ Cheesecake

Hola a tod @ s!
estaba buscando una receta para una tarta de cumpleaños que fuese fácil, rica y fresca ( y que no fuese necesario encender el horno para no pasar más calor del que ya hacía :))
Siempre me han gustado las tartas de queso y por fin encontré una receta (hay miles!) que me pareció sencilla y rápida, y el resultado delicioso.











Esta receta que enseño corresponde al blog 'pasen y degusten': el blog de Maria José, en el que podréis encontrar deliciosas ideas como ésta y donde casi-casi se puede sentir el olor a 'recién hecho'.

En mi versión de esta tarta de queso no he utilizado para la base galletas Digestive, sino galletas tipo 'Maria'; además, en lugar de meter la base de galletas en el horno durante 10 minutos, también es posible ponerla en el frigorífico entre 10 y 30 minutos. He optado por adornarla con frutos rojos (cómo no...me encantan!!), aunque como bien se menciona en 'pasen y degusten' está buenísima sin ningún tipo de adorno, eso a gusto de cada uno...











Al final ha sido todo un éxito!

Hi all!

I was looking for a nice recipe, a simple cake for a birthday celebration (and that I didn´t have to turn the oven on :))
I´ve always liked the cheescakes and finally I found one nice recipe that I thought it was easy, fresh and....delicious!!




This recipe belongs to the blog 'pasen y degusten': Maria Jose´s blog, where you can find delicious ideas like this one and where you can almost feel the nice smell of the cakes and much more.


Here I show my version:

Ingredients:
For the base:
200 gr biscuits (Digestive or 'Maria')
80 gr butter

The filling:
600 gr Philadelphia cheese
300 gr cream
175 gr sugar

First we cruch the biscuits with  the food processor and then add the butter until is well combined. Spread and press the biscuit mixture firmly over the base and side of the mold. This can be done using a spoon.




Place the biscuit mixture in the oven during 10 minutes at 180 ºC, then let it cool down, but you can also cover it with plastic and place it in the fridge during 30 minutes.

Mix the cheese, the cream and sugar with a mixer until is well mixed (3 minutes more or less).
We can now spread the filling on top of the biscuit mixture and let it cool down in the fridge (you can leave it in the fridge the whole night and decorate next day)








I just used the seasonal fruits (red fruits) to decorate it and bit of jam, but you can use your imagination here...it´s already delicious without decoration.
Well... I can tell you that you will need more than one bite or two ;)

Magdalenas crujientes con frutos rojos/ Crispy muffins with red berries

Hola a todo@s, 
Ya en el medio del verano, y con el calor que hace, creo que es una buena idea utilizar las frutas de temporada para elaborar los postres caseros.

Hoy traigo una receta deliciosa y muy sencilla de preparar, además de una alternativa saludable a las magdalenas tradicionales. 
 Empezamos!




Ingredientes: 
225gr de harina leudante
85 gr de polenta
75 gr de azúcar moreno
150 gr de mantequilla
La raspadura de un limón
1 huevo batido
El zumo de medio limón
Mezcla de frutos del bosque (arándanos, moras, bayas...)




El primer paso es mezclar la harina, la polenta, el azúcar y la mantequilla con un robot de cocina hasta obtener una masa 'grumosa'



A esa masa le vamos a añadir la raspadura de limón, el huevo batido y el zumo de limón hasta obtener una masa suave pero con grumos (como en la foto).

En el siguiente paso podemos añadir los frutos rojos que hayamos elegido, en este caso yo he utilizado arándanos rojos y azules, pero como ya os he dicho se pueden añadir los que más os gusten; y mezclamos bien con una cuchara.



Llenamos los moldes de las magdalenas con la masa (se pueden llenar más de la mitad ya que no van a crecer demasiado)



Finalmente los metemos en el horno a 200ºC durante 20 minutos aproximadamente....


Y ya los tenemos!! crujientes por fuera y esponjosos por dentro. Como ya os comenté, son una sana alternativa a las magdalenas tradicionales: los frutos rojos tienen muchas propiedades antioxidantes y la polenta que es un cereal muy nutritivo, saciante, con poca grasa, contiene potasio, manganesio y algunas vitaminas como B1 y B2.

Hi everyone!
we are now in the middle of the summer, and I think  when we make homemade desserts, it´s a good idea to use seasonal fruits. 



Today a delicious and healthy alternative to the traditional cupcakes. I hope you enjoy and you can get some good ideas to try at home ;)

Let´s start!

Ingredients: 
225gr self raising flour 
85 gr polenta 
75 gr brown sugar 
150 gr butter 
Lemon zest
1 egg 
The juice of half a lemon 
Mixed berries (blueberries, blackberries,...)




First, we mix the flour with polenta, sugar and butter in a food processor until we get a ´lumpy´dough



Then we add to the dough the lemon zest, the egg and the lemon juice; mix well until all the ingredients are integrated and we get a soft dough.

Next step, we add the fruits that we have chosen (I used in this case, cranberies and blue berries). Mix well with a spoon.




Now, fill the cupcakes molds generously with the dough and place in the oven 200ºC during 20 minutes.





and...there you are!!!...crispy in the outside and soft in the inside!!, as I said before this is a healthier alternative to the traditional cupcakes: red fruits have many antioxidant properties and polenta is highly nutritious cereal, low fat, contains potassium, manganese and some vitamins like B1 and B2.

Natillas con crocante de quinoa/ Vegan Custard with quinoa crumble

Hola a tod@s! ¿cómo estáis llevando la semana?; Hoy os traigo una receta super fácil y sana para que la probéis este verano:


Las natillas consumidas bien frías pueden ser un buen postre para el final de una buena comida, ideal para los días de calor que se nos avecinan.
La receta que hoy os traigo difiere un poco de las natillas tradicionales, no llevan azúcar, ni huevo, ni leche; lo bueno es que no nos aportan demasiadas calorías, pero están deliciosas! además, se preparan en pocos minutos.




Ingredientes:
2 vasos de leche de soja
extracto de vainilla
ralladura de un limón
2 cucharadas y media de sirope de ágave (o cualquier otro endulzante natural que os guste)
1 cucharadita y media de cúrcuma
2 cucharaditas de canela
2 cucharadas de maicena



Para el crocante:
1 vaso de quinoa
2 cucharadas de sirope de ágave
una cucharada de cacao en polvo sin azúcar
uvas pasas



Comenzamos mezclando en un cazo la leche de soja, el extracto de vainilla, la ralladura de limón, el sirope de ágave, cúrcuma y la canela. Lo dejamos hervir y a continuación añadimos la maicena sin dejar de remover.


Ésta mezcla, la servimos en un recipiente de cristal y la dejamos enfriar.



Para hacer el crocante, ponemos en un cazo o sartén la quinoa, el cacao en polvo, las uvas pasas y por último el sirope de ágave; lo removemos bien un par de minutos y cuando todo esté bien mezclado lo colocamos encima de nuestras natillas.





El crocante es opcional y siempre se puede sustituir por trozos de galletas si lo preferís o simplemente la crema sola ya está deliciosa. Y es perfecta para aquellos que sois veganos.

Hi everyone!
today´s recipe is super easy and healthy, perfect to enjoy this summer after a nice lunch or dinner. 

My Custard´s recipe it´s a bit different from the traditional Custard: does not have, eggs, sugar or milk, perfect for vegans. It does not have many calories, it takes very little time to prepare (30 minutes) and it´s really delicious.



Ingredients: 
2 glasses of soy milk 
vanilla extract 
zest of one lemon 
2 tablespoons half of agave syrup (or any other natural sweetener you like) 
1 teaspoon curcuma
2 teaspoons cinnamon 
2 tablespoons cornflour



The crumble: 

For the crisp: 
1 cup quinoa 
2 tablespoons agave syrup 
1 tablespoon of unsweetened cocoa powder 
raisins



We start mixing in a pan  soy milk, vanilla extract, lemon zest, agave syrup, cinnamon and curcuma. Let it boil then add the cornflour and cook for five minutes. Serve this mix in a glass  bowl and let it cool.



To make the crumble mix in a pan the quinoa, cocoa powder, raisins and finally the agave syrup; stir well for a couple of minutes until everything is well integrated. You just have to place the quinoa crumble on the top of the custard.



The crumble is optional and can always be replaced by pieces of cookies if you prefer. I hope you try this at home because is very easy, healthy and tasty.
